Quick and Easy Blender Salsa


Quick and Easy Blender Salsa
(Restaurant Style)
1 14oz can diced tomatoes
1 10zo can Original Rotel
½ small onion, chopped
1 clove garlic peeled and smashed
½ jalapeno (half without seeds is the spiciest I like it (medium))
1 tsp honey
½ tsp salt
¼ tsp cumin
medium sized hadful of cilantro
juice of 1 lime

Put all ingredients in a food processor or blender and pulse until all ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust as you see fit.

This is REALLY good salsa considering it comes from canned tomatoes. I will never buy a jar of salsa again.

Easy Garlic Chicken



4 boneless skinless chicken breasts                
4 garlic cloves
4 TBSP brown sugar
3 tsp olive oil

Preheat oven to 500 degrees and lightly grease a casserole dish. In a small sauté pan, sauté garlic with the oil until tender.  Remove from heat and stir in brown sugar.  Place chicken in dish and cover with the garlic/brown sugar mixture.  Add salt and pepper to taste.  Bake uncovered 15-30 minutes.

Fajita Seasoning Mix


1 TBSP cornstarch                                     2 tsp chili powder
1 tsp sugar                                                   ½ tsp salt
1 tsp paprika                                               ½ tsp onion powder
¼ crushed red pepper flakes                  ¼ tsp garlic powder
½ tsp cayenne pepper                              ¼ tsp cumin

Mix all ingredients together and sprinkle on wet chicken in pan. This batch feeds my family of 6 (I guess each time on how much chicken I put in pan)

Chess Squares


This is delish! It's super rich but a great thing to take to a party.

1 box yellow cake mix
3 eggs
8 oz. cream cheese, softened
½ cup butter, melted
4 cups powdered sugar

Preheat oven to 300 and spray 9x13 pan with cooking spray.  Mix cake mix, melted butter, and one egg to a soft dough.  Press into the bottom of the pan. Mix powdered sugar, softened cream cheese, and remaining two eggs until smooth (about 1-2 min).  Pour on top of crust.  Bake for 50+ minutes until top is golden brown (watch out for soft middle).

Playdough

I saw this recipe on Pinterest and it is by far the best playdough recipe I have tried. It didn't have the salty feel that most have.


3 cups flour
½ cup salt
6 tsp. cream of tartar
3 ¼ cup water
3 TBSP oil
food coloring

Whisk all dry ingredients toether in a large pot until no lumps remain.  Whisk in the wet ingredients (except for food coloring) and stir until no lumps remain. Cook on high for 3-4 minutes until a dough forms.  Separate into several portions and add food coloring, kneading until uniform in color.  Store in airtight containers.

Zucchini, Black Bean and Rice Skillet


Yummy! You could add a meat to it for a main dish, or it's great as a side.

1 TBS oil                                                                    1 can fire roasted diced    
1 can black beans                                                               tomatoes w/garlic
2 cups sliced zucchini or squash (or both)        ½ cup diced green pepper
1 cup cooked rice                                                    Shredded Cheese

Cook rice beforehand. Heat oil in a large skillet over medium heat. Add zucchini/squash and bell pepper; cook 5 minutes. Add beans, and undrained tomatoes. Add rice and stir well. Sprinkle with cheese.
